This distinctive co-fermented coffee from Sebastián Ramírez and El Placer Farms in Quindío, Colombia. Sebastián is a fourth-generation coffee producer who has become internationally recognized for his innovative processing methods and commitment to quality. Through El Placer Farms, he combines traditional coffee cultivation with carefully controlled fermentation techniques to produce coffees that are expressive, consistent, and traceable.
Coffees from the project have been featured in world-level coffee competitions, highlighting Sebastián’s impact on the specialty coffee industry.
This lot is a caturra processed using a honey co-fermentation method. After an extended anaerobic fermentation, the coffee undergoes a second controlled fermentation with dehydrated strawberries, designed to enhance and elevate its red fruit characteristics while maintaining balance and clarity in the cup.
This coffee gave us trasitng notes of strawberry yogurt, raspberries, cinnamon, hibiscus and cherry.
